Charred Broccoli in miso tahini

Making vegetables taste great couldn’t be any simpler. You can easily swap broccoli with any vegetable you like, varying the cooking time depending on what you choose.

Ingredients

For dressing
1 tbsp red miso
2 tsp mirin
1 tbsp light soy sauce
1/4 cup tahini
1 tsp ground white pepper
1-2 tbsp hot water
1 small clove garlic, minced

1 large head broccoli

2 tbsp olive oil
Salt and pepper for taste
Bonito flakes and toasted sesame seeds for garnish

Recipe Preparation

Preheat oven at 180C with fan assisted, broil function.

Cut off rough stem base of broccoli with knife and use peeler to remove rough surface of stem. Split broccoli in half and place on baking sheet with cut side down. Drizzle with olive oil and season with salt and pepper. Place in oven on middle rack and roast for 15-20 minutes. Check halfway through cooking and reduce heat if broccoli is browning too quickly, or place a baking tray above broccoli to prevent over-browning.

Prepare sauce. Mix dressing ingredients well in a microwave-proof bowl, then heat at 600 watts for 15-20 seconds. Remove from microwave and keep warm.

Remove broccoli from oven. Drizzle dressing on broccoli and sprinkle with toasted sesame seeds and bonito flakes before serving.
