This is a great way to use up leftover grains that you have in the freezer when there’s just not enough for a full meal. Swap with other kinds of seasonings and herbs for other fun flavours!
I made these little patties for my baby, so I did not add any spicy ingredients. Experiment with other herbs and seasoning combinations, such as fresh coriander leaves with curry paste or basil with sundried tomatoes. Smear these patties with fresh ricotta, siracha, or sweet chili sauce for last-minute dinner party nibbles!
Makes around 10-12 patties
Ingredient
3/4 cup cooked, mixed grains such as pearl barley, green lentils, quinoa, or brown rice
1 large egg
2-3 scallions, green parts only, roughly chopped
1 tsp white miso paste
1/2 tsp freshly ground black pepper
Recipe Preparation
Combine all ingredients in a mini food processor. Pulse and process until well combined.
Heat a tablespoon of olive oil in a shallow frying pan on medium-high heat. Drop a heaping teaspoon of the batter into the pan and fry until golden brown, about 2 minutes per side. Repeat for remaining batter, cooking in batches. Serve warm with your (or your baby’s) favorite dips.
Freeze extra for up to 3 months.
