Roast lemon & garlic spatchcock

A PERFECT HEALTHY DINNER FOR TWO, OR MAKE A FEW EXTRA BIRDS FOR A DINNER PARTY. READY IN 45 MINUTES, FROM START TO FINISH (EXCLUDING PREHEATING THE OVEN). SIP YOUR GLASS OF WINE WHILE WAITING FOR THE LITTLE BIRD TO BE READY TO SERVE.

Ingredients

  • 2 spatchcocks, at room temperature
  • 1 lemon, halved and then sliced thick 
  • 6-8 garlic cloves, minced
  • Salt and pepper
  • Olive oil

Recipe Preparation

Preheat a fan assisted oven to 180℃, with the rack in the middle position.

Put the birds in a large mixing bowl with sliced lemon, minced garlic, salt and pepper, and olive oil. Mix well until the birds are coated with the marinade. Stuff the birds with lemon slices before roasting. 

Roast for 35-40 minutes or until juice comes out clear. Rest for 5 minutes before serving. Serve with a mixed salad or grilled corn as a side.
