Shin Ramyun instant ramen stock base

Did you grow up with Shin Ramyun spicy instant noodles? I remember it was such a treat when I was a teenager and I could eat this everyday if my parents aren’t home making dinner for us😋 

The other day I was really craving for Shin Ramyun and while I was cooking, just out of curiosity, I looked at the content of ingredients on the package and I thought, maybe I can remake my own Shin Ramyun seasoning pack without preservatives. And it turns out really nice and full of flavor😍 (I did add MSG to boost the taste and I am not guilty about it🙃), so here you go, you can now make your own Shin Ramyun seasoning pack at home!

I have created a stock paste so all you need to do is to add water to dilute to the consistency that you like. Add more salt or gochugaru as you prefer. 

Make approximately 6 portions

Ingredients

MSG 2 heap tsp

Gochugaru 2 tbsp

Garlic powder 2 tsp

Onion granules 2 tsp

Ground shiitake powder 1 tbsp

Nutritional yeast 1 tbsp

Ground black pepper 1/4 tsp

Salt 2 tsp

Sugar 1tsp

Corn starch 1 tsp

2 tbsp red miso

1 cup water

Recipe Preparation

Mix all ingredients with water. Heat the mixture in a small saucepan to a boil then turn down the heat to medium low, let it simmer. Stirring occasionally, for 20-30 min. It should turn into a thick paste. Remove from heat. 

Storage: once the paste has cooled down, transfer to silicon ice cube container and freeze for later.

Instructions: Boil 1-2 stock cubes with 2 cups of water and serve with your favorite noodles and toppings. Since this is homemade stock it is not as salty as the seasoning package from Shin Ramyun, add extra soy sauce or salt to your liking and enjoy!
