This high protein poké bowl is my go-to quick lunch on a warm summer day, especially with a newborn in the family. Instead of the usual salmon or tuna sashimi, I made this with a Swedish plant-based tuna that I absolutely love!
Poké bowls are perfect because I can easily see what I have in my bowl—usually one or two types of protein, a good source of fat, fibre, and carbs. Sushi rice isn’t the “healthiest” option, so feel free to swap it for your preferred whole grains!
Since most ingredients are chilled, you can prep a few extra portions in individual boxes and have lunch ready for a few days!

Ingredients
- – 1 tbsp Gochujang
- – 4 tbsp mayonnaise
- – 1 tsp sesame oil
- – Freshly ground black pepper
- – 1/4 juice of lime
- – 1/4 tsp minced garlic
Recipe Preparation
Mix all ingredients in a small bowl, toss with your slaw veggies, or use it as a dipping sauce for grilled veggies or protein. Store any extra in the fridge for up to 3 days. Enjoy!
