Yes it is easier to just buy granola off the shelf, but it is not easy to find the right proportion of nuts, seeds, fruits that I like!
A quick tip regarding the type of nuts and seeds you should use. Always use raw nits and seeds or the result will taste burnt. I try to use dried fruits in cubes and if you are cutting whole dried fruits for the recipe, watch out to not get them dried out too much as they are generally thinner.
My conclusion for a perfect granola is adding apple juice, the extra sugar helps to stick the oats together and give extra crunch each bite. Varied the nuts that you like, I like pecans, hazelnuts and almonds. As for fruits choices, try to pick a “theme”, there are a few examples that you can try:
- Banana chips, papaya, pineapple, mango, passion fruit
- Apple, almond, cranberry, cardamom, cinnamon
- Cocoa nibs, coconut chips and goji berries
- Dates, pistachios, walnut, sesame seeds, coconut chips

Ingredients
- 300g whole rolled oats
- 1/4 cup apple juice
- 1 tsp Cinnamon powder
- 2 tsp vanilla extract
- 125ml runny honey or maple syrup
- 2 tbsp coconut oil
- 2 tbsp raw sesame seeds
- 2 tbsp linseeds
- 100g raw pecans, roughly chopped
- 50g raw pumpkin seeds
- 50g raw sunflower seeds
- 30g dried papaya in precut cubes
- 30g dried pineapple in precut cubes
- 30g dried passion fruit in precut cubes
- 10g raw, dried coconut flakes
Recipe Preparation
Preheat oven to 170C, fan assisted. Line a large baking tray with parchment paper.
In a large mixing bowl, mix oil, vanilla extract and honey or maple syrup until combined. Stir in oats, cinnamon, nuts, seeds and coconut flakes until very well combined.
Spread out evenly, onto lined baking tray and bake for 12 minutes, it should look slightly brown but not yet crisp. Remove tray from oven. Toss in dried fruits and mix together. Return tray back to the oven and bake for 10 minutes further, until oats are golden and crispy on edges.
Remove tray from oven and let granola to cool on the tray completely before storing into an airtight jar.
Store in an airtight container at room temperature for up to 3 weeks.
