Asian style Buffalo sauce

You might want to get yourself a pair of gloves before you eat wings or drumsticks with this fiery topping!

Who needs Frank’s hot sauce for buffalo wings when we have such wide variety of hot sauce in Southeast Asia? With this recipe, I thought I would try giving an Asian twist to traditional Buffalo sauce. Try it on roast turkey drumsticks tonight! But a word of warning beforehand… You might want to get yourself a pair of gloves before you eat wings or drumsticks with this fiery topping!

Makes about a cup

Ingredients

  • 80 g butter
  • 1/2 cup Sriracha sauce
  • 1/2 cup ABC Sambal sauce
  • 2 tbsp white vinegar 
  • 3 tsp caster sugar (or more, depending on your heat tolerance)
  • 1/2 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • Salt and pepper to taste

Recipe Preparation

Heat a small pan on medium high heat and add all the ingredients in. Use a silicone whisk (if you are using a nonstick pan) to stir the mixture frequently until butter is dissolved and dried ingredients are combined with liquid. Let it simmer for about 1-2 minutes, then remove from heat and let it cool to room temperature. Serve with roasted chicken drumsticks or wings or chicken meatballs or use it as a dipping sauce for any sort of meat dish. Keep in a sterilized jar in the fridge, letting it reheat to room temperature before serving.
