Banana oats loaf

This recipe is great for breakfast/lunch/snacks – any way you want it!

I usually use this recipe to make mini pancakes for my 2-year-old’s breakfast when I have very ripe bananas that I need to use up, but this time I thought I would give it a twist and chuck it in the oven to make a sweet loaf. It probably takes about the same amount of time, but there’s a lot less hassle, and you don’t have to worry about destroying the soft pancakes when you flip them. This loaf is great for breakfast/lunch/snacks – any way you want it!
 
Using very ripe, almost fully dotted or blackened bananas gives you the best taste. If you are going to be feeding it to a baby without teeth, you can use instant oats instead of rolled oats. As someone with teeth, I much prefer to use rolled oats, as they have more chewiness.

Makes about 8 small triangles or enough for 1-2 breakfasts or 2 toddler snacks.

Ingredients

  • 1 large ripe banana
  • 1/4 cup of rolled or instant oats
  • 1 large egg, beaten
  • 1 pinch of raw coconut chips or 1-2 tsp of shredded coconut (optional)
  • Unsalted butter for greasing pan

Recipe Preparation

Preheat oven with fan assist to 170℃.

Grease a small loaf tin with unsalted butter. (Use the smallest tin you have so that when you pour the batter in, the loaf is approximately 1-1.5cm deep. You can also use a muffin tin but you might need to adjust the cooking time accordingly)
 
Using a medium bowl and a fork, mash banana until it forms a relatively smooth paste. Add oats and coconut chips/shredded coconut, then mix until combined. Add egg and mix well.
 
Pour batter into tin and bake for 15 minutes or until edges are golden brown. 
 
Remove tin from oven and let it rest for 5-10 minutes. Use a plastic chopping board to cover the tin and flip upside down. With a few shakes, the loaf should come out of the tin easily, otherwise use a thin, flat spatula to remove. Cut the banana loaf into whichever shapes you prefer and serve warm. Or store loaf in the fridge until needed. They are best serve within the same day. Warm them up in the microwave just for 30-60 seconds if you prefer.
